Slimmers Mushrooms With Couscous

recipe for slimmers including mushrooms and couscousMushrooms contain nutrients – phosphorus, magnesium, potassium, selenium, Vitamin C and B6. As they contain virtually no fat they are an excellent slimmers dish.

This  tasty dish with a Moroccan influence is for 4 people.


  • 30ml / 2tbsp oil
  • I sliced red onion
  • 450g / 1 lb mixed mushrooms
  • 1 can chickpeas – 400g
  • 1 can chopped tomatoes – 400g
  • 45 ml / 3tbsp harissa paste
  • grated zest and juice of 1 lemon
  • 45 ml / 3 tbsp chopped parsley
  • couscous


Heat the oil in a pan, add onion and saut until golden

Add the mushrooms and saut for a further five minutes until the mushrooms are browned.

Stir in the chickpeas, tomatoes, harissa paste, and lemon juice.

Bring to the boil, cover and simmer for about eight minutes.

Season to taste.

Mix the lemon zest and parsley together.

Sprinkle over mushrooms and serve with couscous.
