Slimmers Mushrooms With Couscous

Mushrooms contain nutrients – phosphorus, magnesium, potassium, selenium, Vitamin C and B6.

As they contain virtually no fat they are an excellent slimmers dish.

A tasty dish with a Moroccan influence, this recipe is for 4 people.

Ingredients

30ml / 2tbsp oil

I sliced red onion

450g / 1 lb mixed mushrooms

1 can chickpeas – 400g

1 can chopped tomatoes  – 400g

45 ml / 3tbsp  harissa paste

grated zest and juice of 1 lemon

45 ml / 3 tbsp chopped parsley

couscous

Method

  • Heat the oil in a pan, add onion and sauté until golden
  • Add the mushrooms and sauté for a further five minutes until the mushrooms are browned.
  • Stir in the chickpeas, tomatoes, harissa paste ,and lemon juice.
  • Bring to the boil, cover and simmer for about eight minutes.
  • Season to taste.
  • Mix the lemon zest and parsley together.
  • Sprinkle over mushrooms and serve with couscous
