Hot Potato Salad

I love potatoes in every way and I am also a vinegar fanatic so I am always experimenting or looking for recipes to combine the two.  My own favorite luncheon dish at any time of the year is hot potato salad. It has vinegar, wine and another of my favorites, eggs.

This is a meal in itself and needs no accompaniment in my opinion as the taste and flavors need no supplement.

You will need: -

  • 2 medium sized potatoes
  • 4 slices of turkey bacon or medium sliced smoked bacon
  • 3 tablespoons of apple cider vinegar (malt vinegar is almost as good)
  • 2 tablespoons of dry white wine
  • 1/2 cup of onions finely chopped
  • 2 teaspoons of white sugar (optional but try it)
  • 2 roughly chopped hard-boiled eggs – 7 minutes on the boil for perfection!
  • A little salt and some ground black pepper to taste
  • 1 dessertspoon of olive oil

Peel and boil the potatoes for no more than 20 minutes until tender, when cooked put to one side and keep warm.

Clarify the onions in the olive oil over a moderate heat and then add the vinegar, wine, sugar, salt and pepper and allow to heat through. Do not allow the onions to brown.

Fry the bacon until crisp, dry off the fat on absorbent kitchen paper and crumble into small pieces.

Pour the hot onion mixture over the warm potatoes and mix in the hard boiled eggs and bacon.

Serve with hot crusty french or herb bread.
