Tasty Roasted Brussel Sprouts With Nuts

For a really tasty vegetable dish which is good for you as well try the following very simple recipe.

Brussel sprouts are packed full of good nutrition –  folic acid, vitamins C and K, beta carotene, vitamin B6, thiamin, potassium and fiber. But also the glucosinolates which are  potent cancer-fighting phyochemicals.

This dish can also be eaten cold as leftovers.

Ingredients
  • 1 pound washed and  trimmed Brussels sprouts
  • 1- 2 tablespoons olive oil
  • salt
  • freshly ground black pepper
  • 2 tablespoons chopped nuts of choice (pecan or chestnuts are good)
  • 1- 2 teaspoons lemon juice (optional)
Method

Heat oven to 350°F.

Toss Brussels sprouts in olive oil and sprinkle with salt and black pepper. Spread Brussels sprouts onto a shallow baking dish and bake for about 20 minutes. Remove from oven and stir, sprinkle with chopped nuts and return to oven and bake for another 10 minutes (or until sprouts are tender when pierced with a fork).

Remove from oven, sprinkle with lemon juice, if desired. Serve.
