Slimmers Mushrooms With Couscous

Mushrooms contain nutrients – phosphorus, magnesium, potassium, selenium, Vitamin C and B6.As they contain virtually no fat they are an excellent slimmers dish.

A tasty dish with a Moroccan influence, this recipe is for 4 people.

Ingredients

  • 30ml / 2tbsp oil
  • I sliced red onion
  • 450g / 1 lb mixed mushrooms
  • 1 can chickpeas – 400g
  • 1 can chopped tomatoes – 400g
  • 45 ml / 3tbsp  harissa paste
  • grated zest and juice of 1 lemon
  • 45 ml / 3 tbsp chopped parsley
  • couscous

Method

Heat the oil in a pan, add onion and sauté until golden

Add the mushrooms and sauté for a further five minutes until the mushrooms are browned.

Stir in the chickpeas, tomatoes, harissa paste, and lemon juice.

Bring to the boil, cover and simmer for about eight minutes.

Season to taste.

Mix the lemon zest and parsley together.

Sprinkle over mushrooms and serve with couscous.
